FRIED MEE HOON WITH SPICY SHRIMP SAUCE



Serving: 2 persons

Ingredients:
4rolls x A1 mee hoon (soaked in cold water till softened)
4cloves x chopped garlic
200g x choy sum
200g x sliced chicken breast
200g x fresh baby shrimp
2TBs x cooking oil
4TBs x plain water
2TBs x spicy shrimp sauce
1TBs x dark soy sauce
2TBs x light soy sauce

Methods:
1.  Heat the cooking oil on high heat.
2.  Lower the heat to medium, fried the chopped garlic till brownish.
3.  Maintain on medium heat, put in sliced chicken breast, followed by baby shrimp.  Fried till half cooked.
4.  Put in the choy sum, fried for a minute or two.
5.  Put in the spicy shrimp sauce and plain water and cover the wok for another minute.
6.  Put in the softened mee hoon.
7.  Mix well with the ingredients in the wok.
8.  Put in the dark soy sauce and light soy sauce and mix well.
9.  Serve while hot.

Tips:
1.  I choose to mix instead of continue frying to avoid mee hoon from shattered.
2.  You may add in more spicy shrimp sauce if you prefer spicier.
